Neapolitan coffee
The Neapolitan coffeepot is composed of two parts, separated by a “basket” filter. The basket is
filled with dark roasted, finely ground coffee. The lower part is filled with water, while the “
service” part is placed on top, closing the pot.
The part containing the water comes into contact with the heat and is brought to the
boil. Finally, the coffeepot is removed from the heat and rapidly turned upside down to allow
the hot water to filter into the basket. This extracts the aroma, the fragrance and the flavour of
the coffee, through to the lower part of the pot. The coffee is ready to drink.
