Fill an espresso cup with freshly brewed coffee. Put a bit of cinnamon in the cup, and leave it there for about 2 minutes.
Squeeze an orange rind into the tasting glasses to add scent to them. This will also create an aromatic contrast, intensifying the coffee’s aroma.
Pour the espresso into the glasses and add 1.2 fl oz of boiling water. Relaxation in a cup, now ready to be served.
