Ristorante Hotel Cinzia (Vercelli). 

This is a tale of passion, a story that begins in the rice paddies of Vercelli, where rice workers would spend entire days up to their knees in water, struggling against mosquitoes and water snakes. Their determination was not so different from that of brothers Christian and Manuel Costardi, born in 1978 and 1987 respectively; true products of their environment, their menu boasts no fewer than 25 different versions of risotto, a symbol of Made in Italy cuisine not yet as ubiquitous as pasta.

 

The elder brother, Christian, perfected both character and daring at just 21 years of age, when he attained the role of sous chef at the Westin Europa & Regina Hotel in Venice. After two years, he gave in to the draw of home and returned to the hotel Cinzia, owned by the family for four generations, revolutionising its kitchen. And while it is true that the raw material makes all the difference, even the most highly prized variety of Arborio means little if not combined with creativity and technique.    

It didn’t take long for their prowess to attract attention, and in 2009 critics awarded them a Michelin star and the Young Talents of the Year award from the Espresso culinary guide (Cavit prize).

In 2015 they began to collaborate with Lavazza, receiving the prize for Best Espresso Coffee from the L’Espresso Restaurant Guide. That year, during the Melbourne Food & Wine Festival, they created a number of recipes using Kafa; one of these, the Coffee and Parmesan Cream Risotto, went on to be featured in a video for the website Great Italian Chefs.

Menus by the CostardiBros, constantly striving for quality and fresh ideas for reinterpretation, are based on four principles: Emotion, Land, Passion, Evolution. Rice is singled out as the star of their dishes, the starting point not only for their main dishes, but also for their dessert creations when given a sweet variation.
